I loved what I ate today…seriously so good! I had the ginger-coconut-carrot-parsnip soup (GCCP) for lunch with some hard boiled eggs then my goodness dinner was EPIC!
Lamb chops from the farmer’s market over kale massaged in olive oil, capers, & steamed veggies
Dessert was inspired by Katie but I made it a single “bowl” cake inside of a cupcake
and I de-veganized it with 1/3c egg whites & only used 2tbsp coconut flour mixed in a bowl then 90s nuke in the microwave… et voila PERFECTION! Topped with HEAB’s easy coconut milk fudge!

I ate at Arizona’s best burger joint for lunch today!!! (According to the USA Today, that is…and according to me.) I had a grass-fed, organic, blahblahblah burger with kraut, green chilies, and grilled onions without the bun and with a beet/tomato salad. AMAZING.
